We used this for this Thanksgiving turkey, approximately 17.5 lb. Being in a bag used a lot less brine than using the large stock pot I had previously used. It also allows me to mix the brine a little with the turkey in it by squishing the bottom and moving it around. I am also able to tie the bag closed and pack ice directly over it to keep the bird cool while not taking up refrigerator space or diluting the brine by continually adding more ice to the brine. Since our local temperatures are only getting to about 50F, the ice should last just fine without issue. When I do this in the warmer months (we usually make a turkey every 2-3 months), I will be able to pull the bird and brine out of the bucket, dump the melt water, and refill the bucket with fresh ice, again without diluting the brine.This bag is a good size, it fits a standard hardware store 5-gal bucket with enough extra on top to fold about half way down the outside. This extra can then be used to tie the bag closed once the bird and brine are in. With a bag, it is possible to push almost all of the air out and keep the entire bird touching the brine. When done with it, I am planning to just put the whole bag in the sink, and cut it open letting the brine go down the drain. That should be less messy than having to take the bird out of a big pot, try not to drip on the counter, then use the other sink to empty and clean the stock pot. We'll see how that actually works.
